My food journal for the last few months of home cooking, eat out in a restaurant, either alone or with family and friends. Identifying my habitual eating patterns and also trucking what I prepare and eat from time to time, should be accordingly from my dietician’s advice.

All Boiled, spinach and squid – iCookiTravel

As a strategy for eating well with diabetes, poaching, broiling and boiling is good less intake of fat much better.  Like saturated fat such as butter instead I usually use margarine, olive oil or canola oil.  Or just boiled it like what you see picture above.  I don’t have to be a world class chef in order to enjoy the modifications of meals I love.  It should be diabetes-friendly and that matters most.

Boiled saba and kalunay leaves (Spleen amaranth) with grilled mackerel – iCookiTravel

Up here my boiled Saba (banana) with jute leaves and grilled mackerel.  I usually eat boiled banana, brown rice, mashed potatoe, mashed carrot or even mashed sweet potatoe (Camote) could be boiled also.  For my carb also to add boiled corn.

Mix pasta in tomatoe sauce – iCookiTravel

While here mix whole grain or whole wheat pasta in tomatoe sauce and a little bit of meat balls.  Whole garins are loaded with fiber. Whole wheat pasta over white pasta much better for us diabetic.

Red Rice plus spinach and sardines – iCookiTravel

Red rice and spinach with sardines a very simple and quick lunch for me alone.  Someting with greenleafy is always ttasty whatever goes with it.  My first time to try red rice was given to me from Nueva Eicija, (Philippines).  I should say it is not mine.  I prefer the brown one.

Monggo (mung bean) et Spinach – iCookiTravel

In my kitchen it should not be Friday to have monggo.  I cook it whenever I’m craving for it.  Cook it with spinach, kalunay, mangold, alugbati, ampalaya leaves or even ampalaya (bitter melon), malunggay, or camote tops (talbos ng kamote).  Usually added meat, minced meat, fish, shrimps, dilis (anchovy), crabs, or even sausages if you are abroad.

YES! Breaky for the day, salad, whole wheat baguet except orange juice it is for my son.  I got tea instead. Maybe you are asking WHY salad?

During summer time if I got up late, salad is good for brunch as well as for braekfast like this.  Breaky outside from time to time with my two kids.

Cauliflower and shrimps- iCookiTravel

Sauteed cauliflower with bok choy, carrot and shrimps.  Low carb, with Vitamin C, contains fiber, potassium and folate. It can only good for diabetic. take it away from me Folks!

Soup of the day – iCookiTravel

Since January 15 of this year (2018),  I’m working fix night shift. Whenever I came home soup is my hearty breakfast.  I got told that offen intake of vegetable and legume soup is good.  I have to focus on food to reduce the risk of disease, such as metabolic disorders and cardiovascular.

This soup made out of chicken broth, with a little bit of noodles, cabbage, carrot and parsley topped with few shrimps.

Oats with blueberry and chia seeds – iCookiTravel

This is also good for breakfast, oats with yoghurt, blue berry, chia seeds and a little bit of honey.  It regulates blood sugar, thanks to high fiber and can lower cholesterol.



A very quick cooking of chicken liver.  My version with paprika powder and Magic Sarap seasoning which I brought here in Vienna from my last two weeks vacation in the Philippines.

Chicken Liver – iCookiTravel


  • 250g Chicken liver
  • 1 Red Onion
  • 1 Tomatoe
  • some Vegetable Oil, I used Margarine
  • 1 tbsp. Tomatoe Paste
  • 1 tbsp. Paprika Powder sweet
  • Magic Sarap seasoning from Maggi ( made with fresh garlic and onion) from Philippines
  • 1/2 a cup of Water (for cooking liver)


NOTE: Adjust seasoning if necessary, Happy Cooking and GUTEN APPETIT!


A mixture of Hokkaido, bottle gourd (upo), eggplant, and bitter melon (ampalaya) seasoned with Bagoong Balayan (fish sauce) and Magic Sarap from Maggi.

Hokkaidi with mix veggies – iCookiTravel

It’s the season of the year again for Hokkaido, Kürbis 🎃 or pumpkin.  You could get for only one euro per piece.  Today I did cook 👩‍🍳 it with mix veggies such as bitter melon, “ampalaya” in Tagalog, eggplant 🍆 bottle Gourd or “upo”, and ground meat. Seasoned with “bagoong balayan” a sort of fish sauce. Sautéed first in red onion, ginger and tomato.


* 2pcs. Eggplant 🍆

* 2 to 3pcs. Bitter Melon (ampalaya)

* 1 small Bottle Gourd

* 1 small Hokkaido

* thumb-sized Ginger

* 1 red Onion

* 1 small Tomato 🍅

* 4tbsp. Bagoong Balayan (Fish Sauce)

* Magic Sarap (from Philippines 🇵🇭)

This was linner a veggiebowl my favorite healthy food, vegetarian boiled water spinach (kangkong), eggplant and chili with sour soup base seasoned with salt only.  Home cooked for me.

Red Bell Peppers with beaten eggs and Whole grain – iCookiTravel

Bell peppers and diabetes, a low carb food and contain fiber an excellent addition to my diabetic diet. Sauteed it with red onion and beaten eggs with my whole grain toast for my breaky.

Fried Tofu and Water Spinach – iCookiTravel

A very good dinner kangkong adobo with lots of garlic and fried tofu. With this I ate it with a little bit of brown rice. For a change. kangkong or water spinach a good source of vitamin, iron and calcium.

Smoked Trout and red rice – iCookiTravel

It was Sunday and this llunch for me. Smoked Trout and red rice from the Philippines with cucumber and tomatoe. My mind says, eat less rice overall for best blood sugar control! As per specialist, the brown rice highly prescribed for diabetics. Well it is up to you what you believe which is good for you. This red rice was only a try for me how does it taste.

Seafood and Vegetable Soup – iCookiTravel

Breaky after seven and half hour Night Duty and that’s five days a week. A huge bowl of soup with seafoods which I love most and vegetables. With shrimps, squid, carrot, broccoli, red bell pepper, cabbage, and beans sprouts spicy but good.


Mangold with Sardines – iCookiTravel

Beacause I also Love green leafy vegetables, here mangold with sardines (Ligo Sardines) the spicy one (Red one) sauteed with ginger and red onion. Huh! was good!

Pizza with Arugula or Rucula – iCookiTravel

YES! Pizza is allowed, but not offen! Here Pizza Arugula with cheese and sliced tomatoe. Arugula or Rucola is rich with calcium, potassium, Vitamin B, C and K. Hello Fresh Cooking Experience. I’ll take you into colorful and happy 😌 kitchen of India! Lots of sweet potatoes 🍠 zucchini and the typical Indian 🇹🇯 spicy Tikka-Masala paste with curry. Which gives you lots of fiber! With Naan-bread as side dish completes the Indian journey. 😀

Sweet Potatoes-Curry – iCookiTravel

This dish is also perfect 👌 on dull weather sort of eating and trying to sleep 😴 after and repeat.🤣


Yields 4 Persons

* 2 pcs. Sweet Potatoes 🍠 peeled & cut into cubes

* 2pcs. Zucchini, sliced

* 2pcs. Red Bell Pepper, sliced split

* 2pcs. Red Onion, peeled & chopped fine

* 80 ml Tikka-Masala-Paste

* 1pc. Tomatoe🍅

* 500 ml Coconut 🥥 Milk

* 4pcs. Naan Bread

* 20 g Parsley, chopped

* 1pc. Lemon 🍋

* some Olive Oil


* Sauté onion and sweet potatoes 🍠 2 to 3 minutes. Then zucchini and bell peppers. Seasoned with Tika-Masala-paste. Add imply tomatoes 🍅 and coconut 🥥 milk 🥛 with salt & pepper adjust the taste. Add lemon 🍋 juice. Heat Naan bread and serve while hot. Happy cooking and Guten Appetit!


GYROS SKEWERS with BACONS – iCookiTravel

If we think 🤔 about Greek food, “Tzatziki” comes in mind right away. Today I will share to you this very simple recipe from “Hello Fresh” which I will try for the very first time,  “GYROS SKEWERS” which is rich in protein with bacon 🥓 of course. Serve with oven potatoes 🥔 and tomatoes. 🍅 It provides or gives you enough fiber for a healthy living.

TZATZIKI – iCookiTravel

As you can see side dish “Tzatziki”. Simply combine cucumber 🥒 chopped garlic and yoghurt, seasones with salt and pepper topped with chopped chives. Serve cold is better.

Gyros Skewers with Potatoes and Tomatoes – iCookItravel


Yields 4 Persons

* 8 pcs. Sticks or Spiesse

* 1200g Potatoes 🥔

* 4 pcs. Tomatoes 🍅

* 560g Pork Loin Steak 🥩

* 160g Bacon 🥓

* Spice Mix for seasoning

* 1 pc. Cucumber 🥒

* 1 clove Garlic

* 20g Chive, chopped

* 300g Yoghurt

* some Olive Oil

* some Salt and Pepper


* Soak the Skewers in a large bowl of cold water 💦 so later it will not burn in the oven.

* Season potatoes 🥔 and tomatoes 🍅 with olive oil, salt and pepper.

* Cut pork loin into cubes and marinate with spice mix (a combination of paprika powder, garlic, rosemary, cumin, dried parsley, salt, pepper, and nutmeg). Cut bacon 🥓 in Haft.

* Roll up the bacon 🥓 and put it alternately on the wooden skewers with the pork loin cubes.

* Preheat the oven to 220°C top bottom heat.  During the last 10-15 minutes cooking time of potatoes 🥔 add skewers in the oven let it cook 👩‍🍳 Happy 😊Cooking and Guten Appetit!😋

Longganisa and Boiled Okra – iCookiTravel

Longganisa and boiled Okra, tomatoe, “bagoong”, actually sauteed anchovy but spicy a pinoy (short term for Filipino) breaky last Saturday morning: dangerous it’s because of rice which is not good for diabetes and for hypertension so with “bagoong” but taste yummy and good for us Filipinos and of course lutong bahay (home cook) is the best. With Tocino, pagkaing pinoy talaga!

Whole Grain Spaghetti – iCookiTravel

Taking my lunch box for work, leftover spaghetti from my son’s dinner.  In Italian— “i PESTI con BASILICO E RUCOLA” in french— “avec BASILIC et ROQUETTE”, topped with Parmesan Cheese. There is nothing wrong with reheating it in the next day. The texture will be slightly different it will very likely have lost some of its bite, but that doesn’t mean it isn’t perfectly edible and it really would be “SHAME” to waste it. Not with me, in some part of the world people don’t have enough to eat!

My son’s viand Boiled Beef (Nilagang Baka) with corn cob and cabbage, family’s old time favorit. I remember my daughter the first time we flew to manila with Singapore airline, the steward asked her what she wants to eat and she said if they have rice with soup, meat and corn cob, that’s what she wants to eat! the steward answered; she had only noodle soup! 😀

My son’s request of the day, spaghetti with ground meat and zucchini. If zucchini or courgette in season the price is as low as 99 cent per kilo. A summer aquash they call it  in america, low in cholesterol and helps maintain a balance of carbohydrates. works great for heart because of fiber. Ihances digestion and  improves eye health too. And of course hepls control diabetes.

A classic recipe for steamed mussels with white wine is a quick and easy thing to do with for Saturday dinner for two. Richer in magnesium, iron, iodine, and nitrate. Also contain high levels of vitamins A, B, and C as what studies told brought us. Mussel dish can be paired well with a refreshing salad.
